Our Story

How it
all
began.

Collin and Celine

Collin and Celine first crossed paths on the natural gas trade floor at ExxonMobil, where Celine was interning and Collin had already been part of the team for a few years. There was an easy chemistry from the start — the kind you try not to read too much into when you still have to see each other at work every day.

They waited until Celine's internship was winding down to act on it, starting with drinks at Padre's and dinner at Coltivare in the Houston Heights. A few more dates followed, and the whole thing wrapped up — appropriately enough — at BCN, the night they made things official. A Spanish restaurant for a first chapter that would, not so coincidentally, end with their first international trip together being Barcelona.

Life together quickly found its rhythm — date nights at El Tiempo, Clark's Oyster Bar, and their favorite local dive, Southern Yankee Crafthouse, mixed with frequent trips to Southern California, New York City, and Miami. The kind of life that's equal parts comfortable and always moving.

Two and a half years in, Collin brought Celine to Aspen, Colorado — and popped the question. What felt like a quiet, intimate moment turned into something even better: a room full of family and friends waiting to celebrate them at a local bar. They spent the rest of the weekend the only way they know how — good food, great drinks, and hitting the hiking trails together.

Now, March 6th is right around the corner, and they can't wait to celebrate with everyone who has been part of the journey.

The Ceremony

Annunciation Greek
Orthodox Cathedral

In 1917, the Annunciation community organized the first Greek Orthodox Church in Houston, located on Walker Avenue in what is now Tranquility Park in downtown Houston. Required to move due to city construction and its own growing membership, the congregation erected its present sanctuary on Yoakum Boulevard in 1952. Annunciation gained the distinction of "Cathedral" in 1967 when Houston became the See of the 8th Diocesan District of the Greek Orthodox Archdiocese of North and South America. While the Metropolitan Center is now located in Denver, Colorado, Annunciation Cathedral remains one of the largest Orthodox churches in America and a center for Orthodox education, ministry, and Greek cultural life in the Houston area.

Phil and Renata DeMoes raised their twin daughters, Celine and Danielle, in the Annunciation Greek Orthodox Church. The girls grew up deeply connected to the parish community, and Celine has since introduced Collin to one of her family's favorite annual traditions — the Greek Festival, held each October to celebrate Greek culture, food, and Orthodox life.

The DeMoes' are overjoyed to welcome you to their church and to share this magnificent cathedral and ceremony with the family and friends they love most.

The Reception

La Colombe D'or
Mansion House

Originally built in 1923 as the private residence of Walter W. Fondren, a founder of Humble Oil, this storied mansion is one of the last remaining grand homes along Montrose Boulevard. In 1979, Houston attorney Steve Zimmerman reimagined it as a boutique hotel, drawing inspiration from a French auberge he once visited, where works by Chagall and Picasso adorned the walls. Now a registered Texas Historical Landmark, the hotel blends old-world character with modern refinement.

The Mansion holds deep significance for both families. Phil and Renata DeMoes, parents of the bride, had one of their very first lunch dates at the Mansion House restaurant with Phil's parents visiting from Alabama. It was a place of meaning for what is now a 25-year marriage — and now, in a beautiful full-circle moment, it becomes the setting for the next chapter of the DeMoes' story.

For the groom, the connection is equally personal. Collin has called the hotel Residences home for the past three years — beginning shortly after he and Celine started dating in August of 2023. Their courtship was woven into the fabric of this neighborhood: evening walks along Montrose, oyster-filled dinners at Clark's or Southern Yankee Crafthouse just around the corner, and pre-dinner cocktails at Bar No. 3, the timeless bar tucked inside the Mansion House itself.

Collin and Celine feel deeply humbled and privileged to share their special day with you at such a uniquely meaningful place.
